This is a very interesting recipe that we made at one of our Cookpad class, last year. One of the chefs who normally teaches the class introduced us to it and I loved it! Watch out for the video recipe coming out soon. The best part of this recipe is that it is healthy since it uses no oil, the meal is steamed and so easy to make. I love both rice and chicken, so this fulfils both my love for the 2. It is such a unique way to have your chicken and rice without any hustle!
INGREDIENTS
1/2 Kg Minced Chicken
1/2 Kg Rice
1 Green Bellpepper
1 Yellow Bellpepper
1 Green Bellpper
2 Eggs
Pinch Salt
1 Bunch Dhania
1 Teaspoon Black Pepper
1 Teaspoon Paprika
1 Carrot
1 Tablespoon Minced Garlic
METHOD
Soak rice for 2 hours in water
Add the minced chicken in a bowl
Add grated carrots into the mixture
Chop the colored bellpeppers, mince the garlic
Add the chopped vegetables into the minced chicken mix, add chopped dhania (cilantro)
Crack the 2 eggs into the mince chicken
Mix the mixture well
Add 1 tablespoon white vinegar. Mix well and set aside
Rinse the water from the rice and add grated carrots into the rice
Add chopped dhania
Mix thoroughly
Scoop a spoonful of the minced chicken with a spoon. Form into round balls. Add the minced chicken ball into the rice mixture
Gently pat the rice onto the minced chicken mix
Repeat the process ensuring the rice is evwnly and well coated on the mince chicken mix
Use a metal sieve
Add the chicken balls onto the metal sieve
Make sure there is enough space between the balls. How beautiful do they look?
In a pan that is equal to the sieve, add water half way. Place the metal sieve ontop of the pan with water
Cover the pan
On medium heat, let the chicken rice balls steam for around 20 minutes
To be sure the chicken and rice are cooked, check that the rice should have porcupine like spikes ontop
The chicken rice balls are ready
So easy to make, healthy and truly delicious. Serve over a bed of green salad
These are perfect as appetizers or even lunch!
