This was one of the best salads I have ever eaten! When it comes to chicken, I love how there are so many ways to have it. And adding the chicken to salads is one of those things that gives me an excuse to enjoy salads. For this recipe you do not really need to cook chicken again, left over chicken works best. This is because the left over chicken already has its own flavours which adds texture, flavour and variety. Gouda is also a cheese I had never tasted before, but I kind of like it, it has a salty taste that went perfectly with this chicken


1 Cup Shredded Cooked Chicken
1/2 Cup Gouda Cheese
1 Tablespoon Roasted Peanuts
4 Cherry Tomatoes
1 Cup Green Lettuce
5 Strawberries
1/2 Green Bellpepper


Clean and roughly chop the lettuce, add to bowl

Add thinly sliced green bell peppers

Add cooked shredded chicken

Half the strawberries and add to the bowl

Cut the cherry tomatoes in half, add to bowl

Mix the ingredients well

Add thinly sliced gouda cheese

Sprinkle roughly chopped roasted peanuts

Toss to mix the salad ingredients

I love how vibrant and colorful the chicken salad is

Serve immediately. You can add a salad dressing but I love tha this salad is still delicious as is

Perfect balance od sweet and salty
