NUTMEG CHOCOLATE MIXED SPICE ROCK CAKES

Rock cakes kind of always remind me of Christmas. I know, I know, it’s only March and it was Christmas only 4 months ago! But hear me out. Rock cakes especially cinnamon ones remind me of mom’s baking when we were kids. The smell of baked goods wafting through the house was a sign that it was Christmas morning.  We would all excitedly go to the kitchen knowing that freshly baked goodies awaited us. The best part of eating these rock cakes was the crunchy slightly hard exterior then biting into the soft fluffy insides! Aaaaaah, great memories.

INGREDIENTS

450g All Purpose Flour
Pinch salt
2 Teaspoon Baking Powder
1/8 Teaspoon Baking Soda
2 1/2 Tablespoon Milk
1 1/2 Teaspoon Mixed Spice
1 1/2 Teaspoon Nutmeg
75g Butter
75g Sugar
4 Tablespoons Chocolate Sprinkles

METHOD

Add flour to sieve with baking powder

Add salt

Add baking soda

Start sieving the mixture

Sieve until all the dry ingredients are through the sieve

The fine mixture airets the mixture for a much finer texture of the dry ingredients

Add butter into the flour mixture

Start rubbing butter into the flour with your fingertips

Rub until the mixture forms fine breadcrumbs

Add nutmeg

Add mixed spice

Add sugar, mix until well combined

 Add chocolate sprinkles into the flour mixture

You can add chocolate chips or chocolate chunks too, mix well

Pour in milk few tablespoons at a time

Mix until you get a sticky dough

Butter or oil your baking pan

Use a tablespoon to scoop out the batter

If you use an ice cream scoop you will need to prick with fork to create rugged texture

Place the batter scoop onto your baking tray

Make sure that the batter scoops are not too close together to give them room to rise

Scoop all batter onto baking tray

I love the ruggedness of these rock cakes

They are already aromatic even before being baked!

Set the tray in a pre heated oven at 210 °C and bake for 20-25 minutes

The aroma that is coming from the oven is amazeballs!

Remove the rock cakes from the oven

Allow to cool completely before taking the rock cakes from the pan

Golden brown color with bits of the delicious chocolate

I could not wait to bite into these delicious cakes!

Place on plate to serve with tea

Perfect crunch, perfect texture

The inside is so fluffy, soft yet crumbly

They can be eaten as snacks or even topped with syrup, sauce or honey
