CARAMELIZED ONION SAUSAGE & SPINACH STUFFED OMELETTE

Have breakfast like a King, so they said, and so they were right. Last week we talked about the nutritious benefits of eggs and that inspired me to get into my kitchen and whip up an egg recipe. And today morning was just the perfect day to cook this delicious stuffed omelette. I love a combination of spicy, crunchy and soft. All the elements on this dish came together so well that this is my new favorite egg dish. The caramelized onions add a sweetness that contrasts with the spice of the cayenne pepper, which I love.

INGREDIENTS

3 Eggs
1 Sausage Cooked and Chopped
1/8 Teaspoon Cayenne Pepper
1/8 Teaspoon Black Pepper
3 Tablespoons Vegetable Oil
Pinch Salt
1/2 Bunch Sukuma Wiki
1 Onion

METHOD

Whisk the eggs

Add oil in a heated non stick pan

Add chopped onions

Cook onions until lightly browned

Add cayenne pepper

Add black pepper

Add salt

Cook the mixture a few minutes and add the chopped sausages

Add roughly chopped spinach

Turn heat to medium high and fry the ingredients well

Cook until the spinach has wilted 1-2 minutes

Pour mixture onto plate and set aside

In the same pan, pour in the beaten eggs

Allow to slowly cook, scramble slightly so that the eggs thicken up a bit

Continue cooking until the eggs have set and the bottom has cooked

Take the onion spinach sausage mixture from the plate

Line the bottom half part of the eggs with the sauteed mixture

Lift the upper half of the eggs and cover the half with the filling

Press the omelette gently so that filling adheres to the eggs

Use large spatula to lift the stuffed omelette from the pan

Set the omelette on a flat plate

 Perfect omelette filled with caramelized onions, stir fry sausage and spinach

This omelette serves two but you can easily devour it on your own, then no lunch later on

The stuffing is the best part of this omelette, next time I’ll add more spinach because they were too delicious!

Garnish with sliced tomatoes and fresh cilantro
